Ukraine House in Denmark Launches “A Taste of Soborna Ukraine” to Celebrate the Day of Unity

COPENHAGEN, January 25, 2025 – Ukraine House in Denmark is proud to announce the launch of “A Taste of Soborna Ukraine”, a culinary initiative commemorating the Day of Unity of Ukraine, celebrated annually on January 22. The project delves into the essence of “soborna” (соборна)—a unity that transcends territorial bonds—through the lens of Ukrainian cuisine.

Drawing inspiration from the historic Act of Unification in 1919, which united the Ukrainian People's Republic and Western Ukrainian People's Republic, this initiative highlights how diverse regional culinary traditions come together to form a unified, rich cultural identity. From Carpathian herbs to Polissian mushrooms, Bessarabian wines, and Crimean Tatar spices, each region's unique flavors contribute to a shared heritage that tells the story of Ukraine's historical connections.

Beginning this January, Ukraine House will unveil a monthly showcase of traditional recipes, celebrating how Ukrainian cuisine transcends regional boundaries while honoring its local roots. The dishes embody the cultural significance of sobornist—a unity that can be tasted, shared, and celebrated.

Ticket Price: 200 DKK (includes tasting of all dishes + a glass of wine). Additional dishes are available for purchase as take-away. Tickets available  here.

This Month’s Menu:
Seven traditional Ukrainian first courses and one special Danish-inspired creation:

  • Traditional red borscht with meat (pork)

  • Green borscht with sorrel and egg

  • Kapusnyak (cabbage soup) with millet

  • Yushka (broth) with mushrooms

  • Pea soup with smoked pork ribs and croutons

  • Lenten Rozsolnyk (pickle soup)

  • Soup with dumplings in chicken broth

  • Special addition from a Danish chef: Creamy potato leek soup with bacon

This unique event celebrates sobornist not only as a political and historical concept but as a living, vibrant cultural heritage that unites and inspires.
